
These were Oh So Delicious so I wanted to share the recipe!
Twice Baked Potatoes
8 large baking potatoes, scrubbed
vegetable oil
8 slices crisp-fried bacon, diced
1/2 pound (2 Sticks) Butter, cut into slices
1 cup sour cream
1/2 cup milk
1/4 to 1/2 tsp. seasoned salt
1/2 tsp. black pepper
2 cups grated sharp cheddar cheese
2 green onions, sliced
Preheat oven to 400* F. Rub the potatoes with vegetable oil, place on baking sheet & Bake for 45 minutes, or until potatoes are done. Turn down oven to 300*. In large bowl, combine butter, sour cream, bacon, milk, seasoned salt & pepper. When the potatoes come out of the oven, hold potatoes in towel and slice lengthwise. Scoop out the insides into the bowl with other ingredients, reserving the potato shell on baking sheet. Use a potato masher to mix all ingredients together, then stir in 1 cup of cheese. Add green onions; stir, taste & adjust seasonings if necessary. Fill each potato half with the mixture and sprinkle with more cheese. Bake for 10-15 minutes, or until cheese is melted and potatoes are hot.
Definitely not low fat but they are very Yummy!
